What We’re Eating This Week

It’s finally cold here in South Florida, which means the daytime temperatures are in the 50’s and 60’s. This week I’m planning on comfort foods but trying to keep it healthy. I’ll try to share more on Instagram stories as I’m preparing each of these meals throughout the week!

Our Meal Plan for the week of January 24th

MONDAY: Chicken Enchiladas. We have a bunch of chicken breasts so I’ll prepare those in the crockpot, but typically I’ll use a Rotisserie Chicken for the enchilada filling. I mix the prepared chicken with onions, cheese, and enchilada sauce but you can use whatever you’d like!

TUESDAY: Grilled Cheese and Tomato Soup.

WEDNESDAY: Fig and Balsamic Roasted Pork Tenderloin (recipe) with Green Beans.

THURSDAY: Pork Fried Rice (using the leftover Pork Tenderloin).

FRIDAY: Chicken Ravioli with Boursin Cheese Sauce and Broccoli.

SATURDAY: Dinner Out or Takeout!

SUNDAY: Creamy Corn Chowder (recipe).
