What We’re Eating This Week

In an effort to be less stressed overall this year, I’ve committed to meal planning for our family of four on Sunday’s to prepare for the week ahead. I was so excited to pre-order Gina Homolka’s (aka Skinnytaste!) Ultimate Meal Planner and started using it in the beginning of January. It’s great for meal planning, making your weekly grocery list, and also includes easy and healthy recipes (I’ve already tried a few and they’re great). Because I’m always looking for new recipes and easy dinner ideas myself, I thought it would be fun to share what I’m planning on making each week for dinner with all of you. Here’s what we’re having this week!

Our Meal Plan for the week of January 17th

MONDAY: White Chicken Chili (I’m using the Carroll Shelby’s White Chicken Chili Kit)

TUESDAY: Chicken Wings (our favorite are the garlic & parmesan from Whole Foods, I make them in the air fryer) with Garlic Smashed Potatoes (recipe)

WEDNESDAY: Egg Roll in a Bowl (recipe) with jasmine rice

THURSDAY: Orecchiette Pasta with Chicken Sausage and Broccoli (recipe)

FRIDAY: Slow Cooker Chicken Tacos (recipe)

SATURDAY: It’s Children’s Gasparilla here (our first time!) so we’re going to be out all day. I’m going to grab a frozen pizza from the grocery store since I know I won’t feel like cooking, or we might just end up eating out!

SUNDAY: Lemon Chicken Orzo Soup (recipe)
