I promise I have close to zero idea what I’m doing in the kitchen but sometimes I get lucky and find a pretty easy and tasty combination of ingredients {I won’t even call it a recipe} that make our weeknight hustle just a bit easier. Bonus points for large portions which means leftovers!
This super simple pasta was born out of one of those moments where you’re standing in front of your refrigerator trying to figure out what to feed your family for dinner. Luckily, that moment turned into a meal that I’ve made over and over again the past couple years. Here’s what you’ll need:
- Boursin cheese {we buy this in a 3 pack from Costco}
- Pasta, any kind you like or have on hand
- Broccoli, I usually use peas but we were out – I think zucchini would also be great, throw in anything you like!
- A few prepared chicken breasts or the meat from a rotisserie chicken
On Sunday’s I’ve been making a few chicken breasts to have on hand during the week but we also love rotisserie chickens around here – I use them for almost everything! So once you’ve prepared your chicken, get your pasta going and during the last 3-5 minutes of cooking time add your veggie to the boiling water.
Strain the pasta + veggie combo and put it right back in the pot you prepared it in. Boursin cheese is sort of like cream cheese but softer and way tastier. I cut it up a little before throwing it into the pot.
It melts almost instantly and creates a really delicious cream sauce for your pasta.
Add your protein and mix to combine. That’s it you guys – I told you, it’s too easy!
